We make guacamole at least once a month, using a recipe similar to what Vania posted. Only I don't add in any jalapenos to keep it mild, or any salt. A delicious, great way to get those healthy fats.

I also love including avocados in my diet. One of my favorite ways to eat them is to cut one in half, wrap one half to refrigerate and save for tomorrow, then just take a spoon, scoop and eat right out of the skin.

You can use parsley unless of course it causes a reaction also.
Greetings from Mexico.

WOW, what a great dip, I'll try making it this weekend.

OK, so I thought I'd let you in on how we prepare 'guacamole' here in Mexico. It is a great idea to eat it with your meals, specially if you are having some grilled meat or something like that. You need, avocado, tomatoes, onion, garlic, salt and jalapeno peppers and cilantro. It is very simple, actually the ammounts of every ingredient you need depends pretty much on your taste, if you like one flavor more than the other you can use all you want. You just need to chop everything in small cubes, put it in a bowl, sprinkle some lemon and use salt for flavor, and that's it. For the peppers use only the green part, do not use the seeds or the white veins inside because if you do it will be very hot! and do not use too much if you're not used to hot flavors. The idea is to get a very colorful garnish and it makes also a delicious snack with chips.
Have fun!

Andrea, I don't think that cilantro is a crucial ingredient in this recipe. Try to make it without the cilantro and let me know what you think.

I'm allergic to cilantro...in the very bad "throat closes up-tongue swelling" kinda way. What can be used instead of cilantro in your dip? I really enjoy avocado and guacamole, but most of them have cilantro in them, so I can't part-take. What do you suggest? Thanks!
